So my food loving friends let’s talk Soup, warm nourishing goodness that fills your winter belly, with the cooler nights calling us to stay inside its all daggy home pants and snuggles on the lounge, candles are lit and the dryer in the laundry is working overtime. One of the reasons I love soup is , the simplicity of it, this wholesome recipe is like a bowl of medicine for the body & soul….
You can throw this creamy sweetness together in evening or have it simmering in your slow cooker all day welcoming you home with love.
Now this recipe is inspired by an old vegetarian cookbook of mine, it is well enjoyed by my humans at home so I must share
1 tablespoon of coconut oil
2 medium sweet potatoes cut into cubes
1 onion chopped
2 cloves of garlic diced
1 teaspoon of ginger grated
1 tablespoon of curry paste / or grounded chilli
2 cups of vegie stock
2ooml of coconut milk
150 grams of spinach
Juice of 1 lime
Seasoned with salt & pepper
1. Melt the coconut oil in a saucepan, sauté onion, sweet spuds, garlic, ginger and curry paste until lightly golden
2. Add the stock, coconut milk and lime juice. Bring to boil then cover and simmer until the sweet spuds are tender.
3. Leave the soup to cool then hand blend only half of it ( so not thoroughly ) . Cook the spinach until it has wilted then add to the Soup, you can then blend and season.
Serve this with warm crusty bread of choice .
